Caneles
These classic French pastries are a study in contrasts with their sturdy, caramelized shell and soft and chewy custard center. Their flavor reminds me a bit of crepes, though they’ve got a stronger character thanks to the rum and vanilla used in the batter. I’ve been told these rival the canelés you’d find in France; they are terribly addictive.
