I had some really disappointing experiences with canneles, a custardy-on-the-inside, crisp-on-the-outside French dessert, in France. These are much closer to home and much better. If you get them fresh from the oven when the cafe opens, you can start to see why they're sometimes known as hand-held creme brulees.
